The
deceptive thing about change is the nearly imperceptible pace at which it
happens. Such is the case with shifts in consumer preferences. At times these
trends can be perceived at the street level, but more often not they're so
broad in scope that it takes an aerial view to really see what's going on.

One of the benefits of
rounding fifty is the perspective it affords. Having eclipsed that age several
years ago, I can honestly admit that all I know is there'll be no Beatle
reunion and the only constant is change. For those of us in the States involved
in the food and beverage business, times they're a changing.
There are
few things more flawed than generalities. They are breaches in logic and often
hurtful to those being minimized. For example, if I said that all chefs are
nuts, you'd be correct dismissing the statement as absolutely false. And while
I think we all agree that most chefs are slightly mad, it's obviously false to
conclude that all chefs are therefore tetched.
