Just In The Nick Of Time

Even though he is my friend and a fellow correspondent, if you're a restaurant owner in the Washington, D.C. area, please do not HIRE career mixologist Nick Wineriter. I personally assure you that he is a product of the "Old School," someone who believes in precise drink-making and attends to his guests' needs with impeccable care. The formalized training he's received has been of the highest caliber, doled out by venerable and well-seasoned bartenders and managers. And while still a relatively young man, Nick has learned his trade well. 

            I suggest that you do not HIRE Nick because the assured result will be change. As I said, Nick is a career bartender and he rarely keeps his thoughts to himself. Since few bars operate anywhere close to optimum, you can anticipate that once behind your bar he will begin offering a steady stream of experience-based insights. I've benefited greatly from listening to Nick and have quoted him in feature articles on various subjects. Of course, if you heed his advice it will make more work for you.

            I suggest that you do not HIRE Nick because he is a stable, well-grounded man. Another aspect of being an "Old School" bartender, he clocks in and puts the best interests of the house ahead of his own. He is not someone who works according to a hidden agenda. Malfeasance? Nick doesn't even know the meaning of the word. I should add that as a happily married man, the women on your staff would be left to work in peace.

            Yup, Nick Wineriter is in the job market, once again looking for a bar to call his own. His last place of employment--Signatures Restaurant--recently closed, due in no part to him. It was a owned by Jack Abrahmoff...yeah, that Jack Abrahmoff. Nick assures me that he didn't personally accept any campaign contributions from the notorious lobbyist, or any notorious lobbyist for that matter; unless you consider gratuities as campaign contributions, in which case he's guilty as sin.

            So, do not HIRE Nick Wineriter. He'll just elevate your bar into the kind of classic cocktail haunt that has become all the rage. Sorry Nick, I'm just telling it like it is.
